Sriracha Honey Glazed Prawns

Ingredients:

For the prawns:

500g large raw prawns, peeled and deveined (tails on if you like)
1 tbsp olive oil or sesame oil
Salt and pepper to taste

For the glaze:

3 tbsp Filthy Pig Classic Sriracha
2 tbsp honey or maple syrup
1 tbsp soy sauce or tamari
Juice of 1 lime (plus extra wedges for serving)
2 garlic cloves, minced
1 tsp grated fresh ginger (optional)

For serving:

Fresh coriander, chopped
Toasted sesame seeds
Coconut rice or a fresh mango salad

Method:

Prep the prawns:
Pat the prawns dry and toss them with olive oil, salt, and pepper.
Make the glaze:
In a small bowl, whisk together the sriracha, honey, soy sauce, lime juice, garlic, and ginger until smooth.
Grill the prawns:
Heat a grill pan, BBQ, or skillet over medium-high heat. Cook the prawns for 1-2 minutes per side until pink and lightly charred.
Toss in the glaze:
Remove the prawns from the heat and immediately toss them in the sweet-spicy glaze so they get fully coated.
Serve:
Sprinkle with fresh coriander and toasted sesame seeds. Serve over coconut rice or a fresh Pineapple salad with extra lime wedges on the side.
